Simple Farmhouse Breakfast Recipes

Three simple farmhouse breakfasts built on eggs, bread, and garden fruit — honest food, eaten slowly before the day's work begins.
A farmhouse breakfast is built on what the homestead provides: eggs from the coop, bread from the oven, and whatever is ripe in the garden. These three simple recipes use that foundation and ask for little else.
Soft Scrambled Eggs with Garden Herbs
The secret to tender eggs is low heat and patience.
Ingredients
- 4 fresh eggs
- 1 tablespoon butter
- 1 tablespoon chopped chives, parsley, or whatever is growing
- Salt and pepper
Method
- Crack the eggs into a bowl and beat lightly with a fork until just combined.
- Melt the butter in a heavy pan over low heat.
- Pour in the eggs and stir slowly with a spatula, scraping the bottom in long folds.
- When the eggs are softly set but still glossy — about 4 minutes — pull the pan off the heat. They will finish cooking on the plate.
- Scatter with herbs, salt, and pepper.
Honey-Glazed Oatmeal Bread Toast
A thick slice of homemade toast with butter and honey is a meal in itself.
- Cut a generous slice of oatmeal or country bread.
- Toast until golden and crisp at the edges.
- Spread with good butter and a spoonful of honey.
- Add a pinch of flaky salt.
Skillet Apples with Yogurt
When the trees are heavy in autumn, this is the breakfast to make.
Ingredients
- 2 apples, cored and sliced
- 1 tablespoon butter
- 1 teaspoon cinnamon
- 1 tablespoon honey or maple
- Plain yogurt
Method
- Melt butter in a skillet over medium heat.
- Add apple slices and cook until they begin to caramelize, about 5 minutes.
- Drizzle with honey and cinnamon and toss for one minute more.
- Spoon over bowls of plain yogurt.
A farmhouse breakfast does not need to be elaborate. It needs to be honest — food you grew or made, eaten slowly, before the day's work begins.
