Quinoa Chicken Salad

Quinoa chicken salad from Black Fox Homestead.com

So to add a little balance to last week’s cupcakes, here is a lovely main dish salad recipe.  With the weather starting to warm up, this would be a perfect way to keep your kitchen cool.

You will need:

2 grilled or poached boneless skinless chicken breasts, sliced thin

2 c cooked quinoa

4 artichoke hearts, quartered

½ c vinaigrette dressing of your choice, preferably homemade (it isn’t hard)

¼ c red onion, chopped or in rings whichever you like

kalamata olives

roasted red pepper strips

crumbled feta cheese

…anything else that strikes  your fancy

Combine the quinoa, and the dressing, adding extra olive oil if need be so that it isn’t too dry. Toss with the artichoke hearts, onion, kalamata olives, and the artichoke hearts.  Top with the chicken and feta cheese.

Variations:

*add chopped fresh parsley, basil,

*delete the chicken for a meatless meal

*swap out the chicken for grilled steak, sliced thin and top with gorgonzola or blue cheese instead of feta

Makes about four servings.  Enjoy!
