Sourdough Hot Cross Buns made with Einkorn Flour

…and a giveaway!

If you read our sourdough post last week, then you know that we have been experimenting recently with sourdough; and with Easter coming up this weekend I decided to give our traditional hot cross buns for good Friday a sourdough twist.

Sourdough Hot Cross Buns made with Einkorn Flour

For this particular recipe, I also decided to try making them with einkorn flour.   If you are not familiar with einkorn, it is one of the ancient grains, and known as the oldest variety of wheat. I have been interested in it for some time because:

It is a rich source of vitamins and antioxidants

Compared to other modern wheat varieites

Einkorn lower in gluten

We also found that we really liked the flavor and texture of the resulting flour.  It is lighter and fluffier than hard red winter wheat and has a flavor very similar to spelt. We used it in a number of things besides our hot cross buns: pancakes, quick breads ~ I even added it to our sourdough starter.  I was delighted to find that the starter responded better with the einkorn flour than with spelt.

Sourdough Hot Cross Buns

Ingredients
  1. 1/2 cup of sourdough starter
  2. 3 1/2 - 4 cups of einkorn flour
  3. 1 teaspoon of ground cinnamon
  4. 1/2 cup of buttermilk
  5. 1/2 cup of melted butter, unsalted
  6. 1/3 cup of granulated natural sweetener of your choice
  7. 3/4 teaspoon salt
  8. 1 teaspoon of baking soda
  9. 3 free range pastured eggs
  10. 2/3 cup of raisins
The night before
  1. Combine the starter, the buttermilk, the cinnamon, the melted butter, the sweetener and the salt in a large bowl.
  2. Add enough flour to make a very stiff dough.
  3. Cover and let set overnight to sour.
The following morning
  1. Sprinkle the dough with the salt and the soda, and with your hands or a wooden spoon work in the eggs and raisins.
  2. Be patient ~ this is easier said than done but stick with it and pat yourself on the back (with clean hands of course) for making something that will be so good for you!
  3. Dough will be sticky but should be pliable.
To shape and bake
  1. Form dough into twelve even balls and place in a greased square pan so that the sides are touching. This will help the sticky dough to rise.
  2. Using kitchen shears or a serrated knife cut crosses in the top.
  3. If you'd like, brush with beaten egg for a glossy finish.
  4. Bake in a preheated 375 degree oven for 12-15 minutes or until firm to the touch.
  5. When cool, use an icing of your choice to form the crosses if you so desire.
Notes
  1. The longer the dough sits in the starter, the more sour it will get.
  2. If you feel that you need more flour when shaping your rolls that is fine, just note that it will not have been treated with the sourdough.
  3. The texture of these will not be as smooth as the traditional hot cross buns but the flavor is still very good.
  4. I used organic evaporated cane juice as a sweetener.

  1. Easter- My only item to bring this year is a vegetable salad! Other family is providing the rest! Turkey, potatoes, salads, rolls, some sort of pie of course!

  2. Hubby is working nights, so no dinner for us, but typically we have a ham. Never made hotcross buns before either.

  3. the usual ham potatoes cole slaw. pistachio cake for desert and fresh deviled eggs from my chicken

  4. We’re having chicken, fermented carrot sticks, and the rest of the menu is still being planned ;)

  5. We won’t be having family for Easter, so Hubz and I won’t do anything special this year. But…we are having family in early summer for a BBQ and some nice homemade buns for grilled burgers will be very nice.

  6. I am not making the dinner–just bringing a side dish of carrots. It is usually ham and potatoes, rolls, and salads and of course eggs and goodies.

  7. We’re invited out so i don’t know what’s on the menu – Einkorn wheat rolls would be lovely!

  8. We had ham from pigs we raised, mashed potatoes, deviled eggs from our chickens, and homemade wheat rolls!

  9. We had sourdough bread with a homemade cheddar broccoli soup among other things. I also made my husband a grill out of fruit.

  10. Easter is past now. There were just the two of us, so I made a potato salad & hot cross buns (true), because I hadn’t gotten around to it during Lent.

  11. We ate ham, mashed potatoes, corn, peas, rolls, and a few different salads. It was delicious.
