Honey Chipotle Chicken Tenders from Black Fox Homestead

Good morning!  Hope everyone had a very Happy Memorial Day!

Here on our homestead we are just getting home from a family wedding, and settling back into what has become a very busy season with our first sale and delivery to the local co op and farmers markets in full swing.  We’re due for a “First Twelve Months” update which will come next week.

For now, here is a great recipe to kick off the picnic season along with a few suggestions for serving.

Honey Chipotle Chicken Tenders

1/4 c honey

3 T soy sauce

2 T olive oil

4 cloves of garlic, crushed

6 chipotle chilies in adobo sauce, minced

salt and pepper to taste

3 lbs. of chicken tenders

Prepare your grill.  Combine the honey, soy sauce, olive oil, garlic, and chilies in a small bowl.  Add salt and pepper to taste.  Pour over the chicken tenders and marinate for at least 15 minutes.  Drain marinade and grill until well browned and heated through.  About 4-6 minutes.  Alternatively you can grill them stove top in a grill pan as shown in the photo above.

Serve with:

Whipped Feta Bruschetta for starters…

    • Chipotles do provide some heat. You could delete them entirely I suppose to make it kid friendly or add a small amount of chili powder.
