Celebrate Valentine’s Day with a little something sweet and simple.
Pots de Creme
2 c whipping cream
4 oz dark or semisweet chocolate chips
1t instant coffee powder
6 large egg yolks
Position rack in center of oven and preheat to 325. Arrange 6 6oz custard cups or souffle dishes in roasting pan. combine cream, chocolate chips, and instant coffee granules in heavy medium saucepan. Bring almost to simmer over medium heat whisking until chocolate melts and mixture is smooth. Whisk egg yolks and sugar in large bowl to blend. Gradually whisk in hot cream mixture.
Divide custard equally among cups. Pour enough hot water into roasting pan to reach halfway up sides of cups. Bake custards until just set around edges but still soft in center (about 25 minutes). Remove cups from water and refrigerate until cold.
White Chocolate Whipped Cream
2 oz high quality white chocolate
2T + 1/2 c chilled whipping cream
Combine chopped white chocolate and 2T whipping cream in a small metal bowl. Set over small saucepan of simmering water and stir until white chocolate melts and mixture is smooth. Remove bowl from over water and cool 10 min.
Beat remaining 1/2 c chilled cream in medium bowl until soft peaks form. Whisk in white chocolate mixture.
Makes 6. Can be made one day ahead.
